Based in South London, we make our spirits by hand using traditional methods in a workshop in SE23.

No outsourcing, no marketing misdirection.


We make English Vermouth, Amaro and Fernet, using only the best natural ingredients. British if possible and organic whenever we can.

Each bottle takes around three months to make, using traditional craft techniques.

Made with care and attention, and only ever in small batches.


Schofield’s Dry Vermouth – Aromatic, fragrant and elegant, this is a complex blend of botanicals infused in English Bacchus, Chardonnay and Seyval Blanc. Perfect for Martinis, White Negronis, or sipping over ice with tonic.

Estate Sweet Vermouth – Our Sweet Vermouth is made by infusing 31 botanicals with English pinot noir. Made in the Italian ‘rosso’ style, notes of orange, cacao, rosemary and wormwood combine to form a full-bodied vermouth. It’s perfect for Negronis, Martinez and Manhattans with rich aromatics that stand up to heady spirits.

Dispense Amaro – Based on 17th Century recipes from ‘The London Dispensatory’, Dispense Amaro combines 24 botanicals including gentian, hops and wormwood, with our family’s Sicilian amaro recipe. Containing British pinot noir grapes, this is a uniquely British amaro. London meets Sicily.

Britannica Fernet – Rich, dark and intriguing, this is an intensely complex British bitter, a London Fernet. Sip over ice as a digestif, add a dash to your Irish coffee or pair with dark spirits for indulgent and opulent cocktails.
