Dunnet Bay Distillery is the UK mainland’s most northerly distillery producing Rock Rose Gin and Holy Grass Vodka.  Located in the spectacular bay of Dunnet, where the freshest of air and the finest of water are in abundance. Our goal is to create spirits which reflect the Caithness way. We hand distil slowly, thoughtfully and passionately to create our exceptional products.

Working with the oldest still makers in the world our bespoke pot still, Elizabeth, has been uniquely designed just to create our spirits. Using a traditional handmade copper head along with botanical vapour basket, it is a small batch process of 500 litres. This ensures tremendous care can be applied to achieve best results. Each bottle is filled, hand-waxed, batch numbered and signed before it leaves our distillery.

HOLY GRASS VODKA

FOUND A STONESTHROW FROM OUR DISTILLERY, ON THE BANKS OF THE THURSO RIVER, HOLY GRASS GIVES THIS VODKA A WONDERFUL, UNIQUE TASTE. The is a delicate and fresh vodka with a creamy smooth finish.  It makes an excellent base for a Martini as well as Vodka and Apple Juice mixer.  Stunningly versatile it also lends itself to the dessert style cocktails such as an Espresso Martini or a White Russian.

A celebration of local produce and ingredients, the spirit is also infused with a carefully crafted vapour of Highland apples and apple juice, to complement the sweetness of the Holy Grass.

The unusual botanical Holy Grass (or Anthoxanthum nitens) was once discovered on the banks of the nearby Thurso River by Robert Dick, a legendary botanist. It was once used for basket weaving and also on church floors to give a sweet, vanilla smell when walked over.  We use apples and apple juice from Highland apples to complement the Holy Grass taste.  These are combined with cinnamon and used in vapour infusion to create our unique taste.

ROCK ROSE GIN

ROCK ROSE GIN GETS ITS WONDERFUL FLAVOUR FROM A CAREFULLY SELECTED AND PUT TOGETHER CREATION OF LOCAL AND TRADITIONAL BOTANICALS. Each one of the 18 botanicals used is meticulously chosen for their flavour properties to create the perfect taste.

Locally we harvest Rhodiola rosea, perhaps more commonly known as rose root, which is a plant that grows in colder climes – ideal for the fresh breezes of Caithness. We use the root of the plant, which has the most wonderful rose aroma and adds a delicate floral note to our gin. Sea Buckthorn and Rowan Berries bring a healthy amount of berries to our gin.  The other flavourful botanicals include blaeberries, cardamon, coriander seed and verbena to name a few.
