As winegrowers, we pride ourselves in crafting terroir-driven sparkling wines using grapes only grown on our Dorset vineyard. We take a low-intervention approach to both grape growing and wine production, constantly striving to minimise our environmental impact and produce honest wines that reflect our terroir.

Located east of Dorchester, our 11.2 hectare vineyard site was planted in 2009 with a mixture of Chardonnay, Pinot noir and Pinot meunier. The vineyard is planted on a south facing slope at approximately 85 metres above sea level and is protected from prevailing weather by a band of mature woodland. The soils are composed of a shallow clay loam overlying a dense bedrock of cretaceous chalk. The sponge-like structure of chalk provides good drainage during episodes of heavy rain, but also a reservoir of water for the vine roots during dry periods. We strongly believe that our chalk soils endow our wines with a fresh, saline character and by reducing inputs both in the vineyard and winery we hope not to cloud these characters.

Rather than restrict ourselves to a particular accreditation we take a low-intervention, pragmatic approach both in the vineyard and winery. The vast majority of work in the vineyard is completed by our small team throughout the year. It is this attention to detail, combined with an integrated pest management approach that allows us to produce healthy, ripe grapes with minimal chemical inputs. Our wines are fermented in a mixture of Burgundy barriques (3-12 years old) and stainless steel vats and left to rest on the spent yeast lees over the winter months. The wines are bottled in late spring without being filtered and with minimal sulphur dioxide.

Rather than be restricted to producing the same wines year after year, we vary our blends and wine styles with the intention to produce the best wines we possibly can. As a result, some of our wines are produced in tiny quantities and are only available for limited periods.
